Though I have been trying to become better at cooking regularly, I’ll admit it’s still a struggle for me. I’m hoping one day I get better (and much faster) at it, but for now I’m a huge fan of quick and easy meals.
I came across this recipe on the lovely blog M loves M and knew it would be the perfect thing to whip up. I modified the recipe quite a bit because I didn’t have all the ingredients and true to form, didn’t feel like going to the store to get it but luckily it still tasted delicious.
I substituted the shrimp for chicken because of my allergic husband and wild rice since that’s all I had. I also added some teriyaki sauce and used broccoli, onions, carrots, edamame, bell peppers and some garlic as my veggie base.
First, I sauteed the vegetables over medium to high heat. Then, I removed the vegetables and quickly added the rice stirring it enough to make it a tad bit crunchy and added the eggs in. On another pan, I fried up some chicken strips that I marinated in the teriyaki sauce.
Final step is to mix all together, eat and enjoy! Now this is definitely my kind of meal, quick and easy to make but completely satisfying. It may not look very pretty but who cares when it tastes good right?!
