eat this: french cuisine

What is it about the French? Doesn’t it seem like they are simply good at everything? Arts, dining, you name it and the French seem to be amazing at it. I just finished reading a great book about getting kids to eat the way the French do titled: French Kids Eat Everything by Karen Le Billon. The book recounts how the author changed her views on food after living in France for a year with her husband and two children. 
I was fascinated to learn just how intense the food culture is in France. They truly not only love food, but also the preparation and most of all the satisfaction of eating it — none of the guilty American calorie-counting. The French eat well and enjoy every last bite. Reading this book reaffirmed my love for not only French cuisine but also their approach to food. They have such a healthy relationship with it and place such a high value on food and cuisine in general. 
I love that they love food and aren’t afraid to embrace it. After reading this book, I’m inspired to apply the French food rules the author writes about in my own life. One way to start is to begin preparing some French cuisine. Croque madam and crepes are just two of my favorite French meals, though I love ordering them at restaurants I am curious to how they would turn out if I actually attempted making them. I will have to test this theory and let you know what I discover..
